Lemon Rice With Vegetables

Ingredients
• Lemon juice 2 tablespoons
• Cooked rice 2 cups
• Carrot,chopped 1 small
• Green capsicum,chopped 1 small
• Oil 2 tablespoons
• Mustard seeds 1/4 teaspoon
• Asafoetida a pinch
• Green chillies,chopped 2
• Curry leaves 15-20
• Dried red chillies,broken 2
• Onion ,finely chopped 1 small
• Turmeric powder 1/4 teaspoon
• Roasted peanuts,crushed (optional) 1/4 cup
• Salt to taste
Method
Heat the oil in a kadai. Add the mustard seeds, asafoetida, green chillies, curry leaves and red chillies. When the seeds splutter add the onion and sauté till translucent.
Add the carrot and capsicum and sauté for four to five minutes.
Add the rice, turmeric powder, roasted peanuts (if using), salt and lemon juice and mix well. Cook till the rice is heated through.
Serve hot.
